OUR DAIRY IN GRIGNO IS MADE UP OF FIVE DISTINCT BUILDINGS, ALL IN ONE AREA OF LAND. THREE CONTAIN SPECIFIC EQUIPMENT FOR THE THREE DIFFERENT CHEESE PRODUCTION LINES, THE OTHER TWO ARE USED FOR AGEING AND PACKAGING.

 

Our dairy in Grigno is made up of different buildings, three of which contain the different cheese production lines that require different equipment that safeguard the characteristics and optimize the quality of the cheese: the first is devoted to fresh and medium-length aged cheeses, the second to semi hard and pasta filata cheeses, the third to hard cheeses.

We make use of functional and innovative technologies that guarantee and fully respect the hygiene and sanitary regulations throughout the different phases of production: milk collection, stocking and quality control of milk, cheese production, ageing and maturing, right through to the packaging and delivery – the whole production cycle is under our direct control.

The cheese maker remains central to the whole process, of course. His art is essential in managing and overseeing the different phases of cheese making, particularly important is his choice of the raw material and his monitoring of production specifications.
