The happy combination between tradition and territory.

With the milk of mountains and valleys of the Trentino and Veneto regions in North Italy we produce different kinds of Asiago PDO characterized by different aging periods: from the Asiago PDO Fresco with minimum 20 days of aging, to the Aged Asiago PDO, aged a minimum of 90 days, to the Asiago PDO Vecchio aged more than 10 months.

And then the Asiago PDO Product of the Mountain, a real specialty mountain cheese produced 600 meter above sea level.

    Milk collected only within the pdo area in north italy.

    Sweet and tasty cheese.
    It has a soft and delicate texture, with small or medium sparse holes and a straw-like color.

    Produced with semi-skimmed milk selected in the farms of the beautiful mountains and valleys of Trentino and Veneto that guarantee its quality and enhance its taste.

    Great when eaten alone with a piece of bread but it can also be used in many recipes. It has a high presence of protein with a well-balanced presence of fat.

    Fine Asiago PDO cheese produced with selected full fat milk. It is aged for over 40 days in controlled temperature and humidity rooms to give the cheese its unique fragrance.

    Its taste is sweet but decisive. It is a semi-cooked cheese, with a soft and delicate texture enriched by its black rind.

    This cheese matches every dish and can be be used in many recipes. It is rich in protein with a well-balanced presence of fat.

    Aged cheese with an unmistakable strong personality and a slight spicy flavor. It is a semi-hard cheese with a granular texture, small to medium sized scattered holes and a straw-like color.

    Produced with semi-skilled milk, selected from small farms in Trentino and Veneto. The specific territory and the long natural aging process guarantee the cheese quality and its rich flavor.

    This cheese matches every dish and can be used in many recipes. It can be enjoyed alone or together with a glass of wine. It is rich in protein with a well-balanced presence of fat.

    Fresh cheese, particularly sweet and full-bodied, thanks to the careful selection of the ingredients. It has a soft and delicate texture and a white or pale straw-like color.

    Produced in our Caseificio Finco in Enego with full-fat milk, rigorously selected in the pastures of the Asiago plateau, that guarantee that typical flavor of high mountain cheeses.

    In order to obtain the “Product of the Mountain” brand, Asiago cheese must be produced with milk collected and processed above 2,000 feet of elevation. The whole supply chain happens in the mountains to respect tradition and preserve flavors of flowers and grass.

    It produced in our Caseificio Finco in Enego with semi-skimmed milk collected in the mountains’ farms of the Asiago plateau at above 2000 feet of elevation.
