The dairy is situated in Enego, on the Asiago plateau, 800 mt above sea level.

Here our story began – just about 100 years ago – and very little has changed since then. Asiago PDO is produced rigorously by hand and using milk exclusively collected from the Altopiano farms.

A love declaration
to the mountain

The Caseificio Finco shows in its every detail always the same thing: our love for the mountains. Not only through its artisanal dimension. But also through the support of farms and our safeguard of short supply chain based in the mountains. We favor mountain pastures and their conservation, promoting the maintenance of woodland and alpine areas – all of which are a great benefit to the mountain community. Through these many ways Caseificio Finco shows our sense of responsibility towards the territory and the tangible commitment to its protection.

of the Mountain

Asiago PDO Product of the Mountain is a peculiarity of Caseificio Finco. One of a very few dairies to produce it all year round. To obtain the label Product of the Mountain the Asiago cheese must be produced only with milk collected and transformed in the mountains, above 600 mt above sea level. A naturally good delight with two main ingredients: uncontaminated nature and great cheesemaking tradition.

    Cheese produced with cow’s milk, salt and rennet.
    Milk collected only within the pdo area: asiago plateau and enego

    Fresh cheese, particularly sweet and full-bodied, thanks to the careful selection of the ingredients. It has a soft and delicate texture and a white or pale straw-like color.

    Produced in our Caseificio Finco in Enego with full-fat milk, rigorously selected in the pastures of the Asiago plateau, that guarantee that typical flavor of high mountain cheeses.

    In order to obtain the “Product of the Mountain” brand, Asiago cheese must be produced with milk collected and processed above 2,000 feet of elevation. The whole supply chain happens in the mountains to respect tradition and preserve flavors of flowers and grass.

    Cheese produced with cow’s milk, salt and rennet.
    Milk collected only within the pdo area: asiago plateau and enego

    Sweet and mildly tasty fine cheese.
    It is a semi-hard cheese, with a compact texture and small to medium sized scattered holes and a straw-like color.

    It produced in our Caseificio Finco in Enego with semi-skimmed milk collected in the mountains’ farms of the Asiago plateau at above 2000 feet of elevation.

    In order to obtain the “Product of the Mountain” brand, Asiago cheese must be produced with milk collected and processed above 2,000 feet of elevation. The whole supply chain happens in the mountains to respect tradition and preserve flavors of flowers and grass.

    Great when eaten alone with a piece of bread but it can also be used in many recipes. It is rich in protein with a well-balanced presence of fat.
