Milk collected only within the pdo area: asiago plateau and enego
Fresh cheese, particularly sweet and full-bodied, thanks to the careful selection of the ingredients. It has a soft and delicate texture and a white or pale straw-like color.
Produced in our Caseificio Finco in Enego with full-fat milk, rigorously selected in the pastures of the Asiago plateau, that guarantee that typical flavor of high mountain cheeses.
In order to obtain the “Product of the Mountain” brand, Asiago cheese must be produced with milk collected and processed above 2,000 feet of elevation. The whole supply chain happens in the mountains to respect tradition and preserve flavors of flowers and grass.
