Talking about the Monti Trentini Dairy means talking about a company which knows how to combine both tradition and quality with modern technology. Monti Trentini S.p.a. is a modern and tecnically advanced company which has made the quality of its product the essential requisite of its dedication and work towards its customers; genuine milk, incontaminated air, experience and tradition - all of these go towards producing only high-quality cheeses from the Trentino region of Italy. Working with milk has always been a family tradition, undertaken in the 1930s by grandfather Florindo. In the 1950s, Gianfranco Finco, the corrent chairman of Casearia Monti Trentini S.p.a., estabilished the dairy in Enego, on the Asiago plateau. His love of hard work and of the mountains was such that his children too, became involved in the business, and in 1989, they decided to develop a new dairy in Valsugana. This is how Casearia Monti Trentini S.p.a. began.
It was decided to concentrade mainly on the production of cheeses with a protected origin denomination (Asiago Pressato, Asiago d'Allevo, Grana Padano and Provolone Valpadana). The dairy covers and area of 60,000 square metres, of which 12,000 is under cover and includes the milk processing unit, the packaging plant, the storage areas where ageing takes place, the cold storage units and the dairy shop.
Careful laboratory tests guarantee a finished product of the highest quality, and the organoleptic characteristics, obtained from pastures mainly in the mountains, make the Monti Trentini cheeses unique. To add to its successful production of D.O.P. (Denomination of Protected Origin) cheeses - Grana Padano, Asiago Mezzano, Asiago Vecchio and Provolone Valpadana, Casearia Monti Trentini S.p.a. is also looking towards developing new products suitable for the preparation of ready-made meals as requested by catering services and the fast-food sector.
